Berry Good Fruit Leather Recipe

You can load them up with overripe fruit from your counter, add extra protein by throwing in some protein powder, and sneak in your veggies by adding dark leafy greens like kale or spinach. They are perfect and delicious for adventures on the trail or at the craig, cheaper than store bought, and fresher than grannies triple berry pie! Okay, almost as good as that.

1 cup fresh strawberries

1 cup fresh blueberries

1 cup fresh raspberries/blackberries

¼ cup spinach or kale

1 tsp vanilla

1/4 cup hemp protein powder (whey, pea protein, hemp, rice etc.)

½-1 cup of water

Optional 2TB of honey OR maple syrup for added sweetness


Combine all ingredients into a blender or food processor.

Blend until smooth!

Tip: Add more or less water for a consistent thickness – not too watery and not too chunky.


Use nonstick Paraflexx Sheets for Excalibur dehydrator, parchment paper, or fruit leather (liquid) inserts for your dehydrator.

Pour and smooth out an even coat (or about 1/8inch) of smoothie on the dehydrator trays.

Don’t forget to leave about 1/2 an inch of space from the edge to prevent dripping.

Dehydrate at 135-140degrees for 4-8 hours. Check and rotate trays every 2 hours.

Rotate the trays every 2 hours for a perfectly even dry.

Your fruit leather is done when the sides start to curl up, dried, & the middle is pliable to the touch but not wet!

Let your leathers completely dry before storing!

If you haven’t eaten all the these fruit leathers in one setting than you can easily store them for later.

Wrapping your leather rolls up in parchment paper will prevent them from sticking to each other.

Store in an airtight container in the refrigerator up to 3 weeks, or in the freezer for a couple months!

Remember to label all dehydrated recipes: Name, Date you made it, & Serving Size.
