Dehydrated Carrot Cake Macaroons

Super easy 1 step raw carrot cake macaroons! Throw ingredients into a food processor, blend, roll into balls, place on dehydrator trays, and enjoy this pineapplily snack. A perfect on the go snack, keeping you energized for any adventure. This macaroon packs a high caloric bite, full of vitamins and antioxidants from the cashews, and natural sugar from the dates, giving you a perfect, sweet boost of energy!

1/2 cup pitted dates

1/2 cup golden raisins

2 cup roasted cashews

1/2 cup carrots, shredded or sliced

¼ cup fresh pineapple, cubed

2 cup unsweetened shredded coconut

1tsp cinnamon

1/4 tsp nutmeg

2tsp vanilla

pinch of sea salt

Chocolate Drizzle:

3 TB sweeter of choice -powdered sugar/honey/maple syrup

3 small sections of bakers chocolate

2 tsp coconut oil

Directions

Are your dates and raisins soft? Yes move to step 2. No – soak your them in warm water for 15min. Drain well and continue onto the next step.

Add dates, raisins, cashews, carrots, pineapple, 1 ½ cups of coconut, cinnamon, nutmeg and salt into a food processor. Pulse all these ingredients for about 30seconds. Scrapping the sides of the food processor bowl, continue with pulsing until soft dough forms.

Roll the dough into balls and coat with the remaining coconut.

Place in your dehydrator!

Chocolate Drizzle:

Heat the coconut oil, sugar and bakers chocolate in a small sauce pan over low heat until completely melted, stirring occasionally. Drizzle desired amount of chocolate over each macaroon.

Set your dehydrator at 125 degrees for 4-6 hours.

Makes 36 Macaroons!

They are done when firm to the touch, but not rock hard. Ready to eat immediately or add the chocolate drizzle on the top!

Allow the drizzle to harden and completely dry before putting macaroons in an airtight container for your next adventure! Lasts up to about 3 weeks.
