3/4 cup pine nuts

**(Pine nuts are expensive, try substituting cashews, pecans or walnuts if you are on a budget.)

3 garlic cloves

¼ cup of cold water

** (Notes – Planning to make pesto wraps? You’ll want your consistency to be thicker than a sauce texture. Add 2TB of water at a time instead of 1/4cup all at once. Test as you go.)

1 ripe avocado

1 cup of fresh basil leaves

¼ cup fresh arugula leaves

1TB lemon juice, freshly squeezed

1tsp salt

1tsp pepper (or hot chili pepper flakes)

Spice it up! Substitute the pepper for 1tsp hot chili pepper flakes

Sweeten it up! Add 2tsp honey

Indulge! Add 4oz of hard fresh cheese (we used goat gouda from Trader Joe’s)

Directions

Give your pesto a try. Depending on your desired taste and texture, you may need to add a bit more water or more salt/lemon juice.

Dehydrate

vday_edited exposure-2-4

If using the Excalibur Dehydrator, insert nonstick Paraflexx Sheets. (The Paraflexx sheets are reusable, non stick, and keep your drying racks clean when dealing with moist foods, liquid items, fruit rolls and leathers)

If using another dehydrator use designated “liquid trays”, parchment paper, or fruit leather inserts.

Spread about ½ cup of pesto in an evenly distributed circle.

Dehydrate at 145degrees for about 4-6hours.

Peel dried pesto off trays and let cool.

Storing your pesto in large Ziploc bags, flat and in a dark cool place, good for about 2 weeks (with cheese) 4 weeks (without cheese).
